Prepare to roll up your sleeves and tuck in your bib to dig into the lusty Pôt au Feu at Chef Olivier Quignon’s next DBGB French Country Dinner. This is about as heart-warming as classic French family-style cooking gets, brimming with slow braised, veal shank, veal tongue, beef cheek, veal breast, bone barrow and short ribs - all just calling out to melt in your mouth, along with their heady broth and tender vegetables. We dare you to find more satisfying winter fare. To get you in the mood, we’ll start off with a Tête de Veau Croustillante with truffle-mustard sauce and frisée salad. The dinner’s crowning final touch is pastry chef Mymi’s sinful Soufflé au Calvados with a caramelized apple center. All this deserves a worthy accompanying brew, courtesy of North Coast Brewing Co, a craft beer making pioneered from historic Fort Bragg on California’s Mendocino Coast.
