DBGB French Country Dinner: Orange Wine and Wild Ale

Now that it’s finally really cold outside, for his next DBGB French Country Dinner Chef Olivier Quignon is channeling the hearty cooking of his native northern France. To drink, sommeliers Jon and Kerrie are reaching deep into their cellars to bring you a sampling of 'orange wine 'wild ale'. We’ll gather family style around long communal tables in the bar to share the feast. To start, classic Mackerel Vin Blanc over wintery root vegetables, paired with a unique ‘wild ale.’ Known as the wine drinker's beer, wild ale’s acidity strikes a balance similar to a Burgundy or Loire wine, making for a super refreshing, food friendly brew. For the main course Chef Olivier is serving up a dish his father used to make: apple cider braised chicken legs and roasted breasts stuffed with foie gras. The apples, salsify and Brussels sprouts on the side compliment the dish along, with a glass of ‘orange wine.’ In case you’re wondering, ‘orange wine’ is a white wine whose extended skin contact during fermentation, makes for a hearty texture, tannin and complexity. To finish: Chef Mymi’s selection of Northern French cheeses, courtesy of our friends at Murray’s. This finale is served side by side with both a wild ale - AND - an orange wine: Zymatore wild ale and Channing Daughters skin fermented Ramato.
